Came home early from work and was looking for something quick to eat. I fried some sweet plantain in olive oil and served it with an avocado.

This dish with take 5 minutes to prepare, 10 minute to cook. use extra olive oil to cook your plantains. 

DIRECTIONS 

Preheat oil in a large, deep skillet over medium high heat.

Peel the plantains and cut them in half. Slice the halves lengthwise into thin pieces.

Fry the pieces until browned and tender. Drain excess oil on paper towels.

Serve with a ripe avocado or just eat it with your favorite sauce.
